In the next cove south of the castle is an island that is "hollowed out". Assuming its man made (straight edges are a givaway) what was it for? and who made it?

I'm no geologist but I would feel pretty certain that this is an entirely natural structure.
I've drawn faint lines on the vertical fissues on your pictures of the rock and these fissures open up under the eroding effects of sea, wind, rain and frost.When a vertical crack is big enough and it meets a horizontal weak area (the rock is sedementary and was laid down millions of years ago in layers) gravity takes over and the loose piece falls. It might be at a cliff face or here in the middle of a stack.
Over the years it is this relentless process that has given the coast its distictive shape.

The lines are faint but parallel to the fissures to try to emphasis them.
Hope this helps and of course I could always be completely wrong.
