Here is something to do with the left-over beef and boiled tatties from the Sunday dinner. Makes a change from Bubble and Squeak
This is a version of a speciality from the Berlin area of Germany.


Leftovers of fatty roast beef
Smoked bacon
2 onions, finely chopped
Boiled tatties, sliced
Lard
3 eggs
Salt & Pepper

Cut the beef into strips.
Mix the beef with 1 chopped onion and fry in hot butter until the onion is golden brown and the beef starts to crisp.
Heat the lard in a separate pan and fry the tatties and second chopped onion until golden brown.
Add the beef to the tatties and carefully mix under.
Mix the eggs together with a fork and add salt and pepper.
Switch off the heat, pour the eggs over the beef and tatties and allow to set.
Serve with a green salad.

I have been collecting recipies for years now Cinderally.
I have got a library of about 50 cook books from all over the world and loads of loose recipies.
