How’s about a tattie cake?

Serves 4

500g / 1lb tatties, grated
1 large onion, chopped
2 tbsp chopped parsley
1 egg, beaten
Salt & pepper
Olive oil

Put tatties in a bowl together with the onion, egg, parsley and salt and pepper to taste.
Mix well.
Heat the oil in a heavy frying pan and add the tattie mixture.
Fry until the underside is dark brown, about ten minutes.
Slide onto a plate and invert back into the pan.
Fry for another 10 minutes.

Burnt bits are allowed on this – in fact it makes it taste better.

mmm potatoes the versatile vegetable lol

mashed with wholegrain mustard or cabbage and onion or corned beef and onion

or maybe grated with carrots and fried

or baked with a million different topping ideas

or roasted with tyme

just segmented and deep fried with dips

the posibilities are endless

How about mashing the potatoes along with some sweet potatoes, gives a brilliant colour and sweetens the mash. My very fussy middle child loves it.

Or Tatties with Sour Cream?

Serves 4

Set oven to 190°C / 375°F / gas 5

700g / 1 ½ lb tatties, sliced thinly
1 large onion, chopped finely
8 tbsp sour cream
Salt & pepper
80 g / 3 oz butter
8 tbsp milk
Chopped chives

Line the base of a large oven proof dish with some tattie slices.
Sprinkle some onion on to and add some of the sour cream.
Sprinkle on a little salt and pepper.
Repeat these layers until nothing is left and finish with a layer of tattie slices.
Melt two thirds of the butter in a pan, stir in the milk and pour over the tatties.
Dot the rest of the butter on top.
Cover and cook in the oven for 1 hour.
Remove the lid and cook for another 20 min. until brown.
Sprinkle on the chopped chives

Enjoy :D

I love my chilli wedges.
Cut potato into wedges, brush with a little oil, sprinkle a generous amount of chilli flakes and sea salt over them, bake / roast in a hot oven 'till done. BRILLIANT. Enjoy.

Have you tried making stovies?

I fry 2 onions along with 8 skinned sausages. (Just squeeze the meat out)
Peel and cut enough potatoes to almost fill an average size pan.
Place your onions and sausages in beside potatoes with a little water ( you can always add more water if needed ) COOK SLOWLY and stir often as they may stick to the bottom of your pan. I usually give mine about an hours cooking.
If you can't get roast dripping from your butcher. Add a tiny spot of gravy browning. Season with salt and pepper.
Delicious with a slice of bread and butter and a cup of milk.
I make a huge pot of stovies if I'm having a party. The only problem is, my pan's not big enough. I think I'll need to buy a catering pan for the next party. LOL
