Remember these?
I had to go years without my ginger snaps, until I found this recipe.
These are just right for dunking in you tea.
This is enough for about 20 bikkies
65g / 2 oz butter
170g / 6 oz golden syrup
½ tsp bicarbonate of soda
90g / 3 oz brown sugar
1 ½ tsp ground ginger
125g / 4 oz sifted flour
Set oven to 180°C/350°F/gas 4
Melt the butter over a low heat and stir in the syrup. Stir in the bicarbonate of soda.
Put the brown sugar, ginger and flour into a bowl and mix well. Stir in the butter/syrup mixture and mix until smooth.
Grease a baking tray well. Drop teaspoons of the mixture onto the tray.
Bake in the hot oven for about 10 min or until golden brown.
Remove from the oven and use a spatula to remove the biscuits. Set to cool on a tray.
Don’t worry if the biscuits are soft when warm, they will be nice and crisp when cool.
Make a nice cup of tea and enjoy. :D
