Why Do They Do It?

Just received the Dan Cruickshank book of architecture to go with the BBC series and some of the best photographs are spread across both pages.
To appreciate the photo's you need to almost break the books spine and even then they are not unimpaired... why do they do that... Better it being perfect and on one page only don't you think...

What other everyday things annoy you when they needn't?
