View Full Version : Cauliflower with a difference

A meal in itself. Mum's put the tomato ketchup away, you won't be needing it.

1 large cauliflower

for the sauce

oil
1 medium onion, sliced
1 tbsp paprika powder
450g / 1 lb corned beef cut into strips
2 tbsp tomato paste
4 large tomatoes, skinned, seeded and chopped
1 large red pepper (capsicum), seeded and cut into strips
1 1/2 tbsp cornflour
100ml / 1/2 cup sour cream
salt & pepper
1 tbsp chopped parsley

Remove the leaves from the cauliflower and place in a large pan.
Add about 1 inch salted water, cover, bring to the boil and simmer for about 30 min or until the cauliflower is tender.
Carefully lift the cauliflower from the pan and cut into four. Keep warm.
Reserve the water.

Heat the oil in a pan and fry the onions until soft but not brown.
Add the paprika, corned beef, tomato paste, tomatoes and red peppers.
Cook for about 3 min.

Stir in the reserved cauliflower water and cook for a further 10 min.

Mix the cornflour with sour cream and stir into the sauce. Simmer for a few minutes until thick, stirring all the time.
Season with salt and pepper.

Pour the sauce over the cauliflower and sprinkle on the parsley.
