WARNING - This is not for calorie watchers.
Kids love these - they are sweet/sour and really messy to eat.

Serves 4

Preheat the oven to 190°C/ 375°F/gas mark 5

1 kg pork spare ribs - Tell your butcher you want the meaty ribs from the breast, not the skinny ones from the belly.
1/2 cup vinigar
1 1/4 cups water
1/2 cup tomato sauce
6 tbsp brown sugar
1 1/2 tsp soya sauce
salt
2 1/2 tbsp cornflour
4 tbsp cold water

Place the ribs in a baking tray.
Combine the vinigar and water and pour it over the meat.
Bake in the oven for 1 hour.

Skim off any fat from the liquid and strain it into a saucepan.

Combine the tomato sauce, brown sugar and soya sauce and mix it into the liquid.
Mix the cornflour with the cold water and add to the liquid.

Stir over a medium heat to thicken.
Do not turn the heat up too high - this thickens to a runny syrup consistancy and if it boils rapidly it will splatter all over your kitchen.

Pour the sauce over the ribs in the baking tin and bake in the oven for a further 30 min.
Serve with rice or chinese noodles.
