4 tbsps sugar
4 tbsps syrup
1 tbsp water

Put above ingredients in a pan and heat slowly until dissolved. Boil
rapidly until hard ball stage. Pour on to well buttered tray.

Turn in edges with a buttered knife until cool enough to handle. Butter
hands well, pull and fold the toffee until almost white. Twist and cut.

8oz sugar(granulated)
3/4 oz butter (for hands)
5 level tablespoons syrup
3 " " " water
1 teaspoon vinegar

put ingredients in heavy bottomed pan( apart from butter) on slow heat
stirring occasionaly, when sugar melts turn up heat and boil rapidly for 10 min's
or until soft ball stage is reached turn out on marble slab (buttered tray will do) butter hands wait until cool enough to handle but not cold and then start to stretch and fold ,stretch and fold until it changes colour to creamy white and then twist in to long rope like strands about 1/2 inch thick and cut in bite size pieces. be warned stretching and folding until colour change takes about a week seemed like, but does take a long time

Does anyone know of anywhere that sells gundie locally. I have not seen it for years. I would love to show it to my kids.
