Anyone have some ideas what do to do with rice just to make a change?
chinese style rice?

Egg Fried Rice


2-3 Eggs
2 Spring Onions finely chopped
2 tsp Salt
3 tbls Vegetable oil
4ozs cooked peeled Prawns
4ozs cooked Chicken or Pork diced
2ozs Bamboo shoots roughly chopped
4 tbls fresh or frozen Peas cooked
1 tbls Light Soy Sauce
120zs-1lb Cold cooked Rice


Break the eggs in a bowl add 1tsp spring onion and a pinch of the salt
beat together lightly with a fork to combine

Heat 1tbls oil in a wok add the beaten egg mixture stir constanly til the eggs are scrambled and set remove from wok and set aside

Heat the remaining oil in the wok add prawns meat bamboo shoots peas and the remainder of spring onions stir fry for 1 min then add soy sauce stir fry for 2-3mins

Add the cooked rice eggs and remaining salt stir well to break up the eggs into small pieces and to separate the rice

Serves 4

1 1/2 cups long grain rice (Basmati)
2 eggs
4 tsp cold water
3 tbsp sunflower oil
4 scallions thinly sliced
1 garlic clove, crushed
Small tin button mushrooms, sliced
2 tbsp oyster or anchovy sauce
Tin of water chesnuts, drained and sliced
8 oz peeled prawns, defosted if frozen
Small bunch watercress, roughly chopped, keep a few sprigs as garnish
Salt & pepper

Boil the rice in normal way
(2 cups of salt water to 1 cup rice. Tip the rice into the boiling water, stir once, turn the heat right down and put the lid on the pan. Leave until all the water is gone, 10 to 15 minutes. You will have a pan of nice fluffy rice.)

Beat each egg separately with 2 tsp cold water and some salt & pepper.
Heat 2 tsp oil in a wok or large frying pan and make 2 thin omlettes with the egg mixtures.
Cut the omlettes into 1 inch squares.

Heat the remaining oil in the same wok or large frying pan.
When really hot add the scallions and garlic and stir-fry for 1 min.
Add the drained mushrooms and cook for a further 2 min.

Stir in the oyster or anchovy sauce and seasoning
Add the water chesnuts and shrimps and stir-fry for 2 min.

Stir in the cooked rice and stir-fry for 1 min.
Add the watercress and omlette squares and stir-fry until everything is piping hot.

Serve at once garnished with the watercress.

Serves 6

3 oz sultanas
6 oz dried fruits
1 tbsp sweet sherry
3 oz butter
1 onion, finely chopped
8 oz cooked rice
1/2 tsp allspice
salt & pepper
2 oz flaked almonds

Put the sultanas and dried fruit in a bowl, sprinkle on the sherry and cover with water. Leave to soak for 4 hours. Drain and chop the larger pieces up small.
Melt butter in a frying pan and fry the onions until soft. Add the rice, allspice, salt and pepper and mix well.
Add the fruit and almonds and turn into a greased casserol.
Bake in pre-heated oven - 190°C, (375°F) gas mark 5 - for 30 min.

If you go to the bbc food website you can search for recipes using ingredients that you specify. So if you put in rice it will bring up all the recipes on the site containing it.

kedgeree is good rib sticking together food in this weather

2-3 smoked haddock
1/2 doz eggs
curry powder
a little milk
a pat of butter
emmm I use 2 mugs of rice not sure on exact quantity
tumeric
boil rice in pan with tumeric (i also hardboil the eggs in the same pan if im feeling lazy)
cut up haddock into chunks in a bowl with the curry powder, milk + butter
blast in microwave until fish is cooked
when rice is ready drain and add to the fish
shell the eggs and stir in to the rice and fish

to make it posh use smoked salmon quail eggs lemon parsley etc..

(but hubby and Lauren like it with tomato ketchup so i dont see the point!)
