These make a light, fresh and Healthy alternative to burgers and go equally well with noodles or in wraps as with anything potato based.

All amounts to suit what you have and particular tastes but don't stint on the flavours as minced poultry always needs twice as much seasoning as seems reasonable...honestly!

Turkey or Chicken mince
Finely chopped spring onion
Finely chopped garlic, ginger and 1/2 fresh red chilli
Finely chopped coriander leaves
Dollop of hot pepper sauce

Polenta/maize flour for coating ( but you can use cornflour if necessary!)

Shape into balls..roll in coating..press into Patties..you could also shape them round skewers and serve with dips.

Grill or fry!

They freeze well too..so you could batch cook some for Christmas nibbles.:D
