I am all for making things from scratch but don't always have the time and I have discovered that 'Gallo' Risotto Pronto makes a failsafe risotto in 12 mins and you can add in whatever you choose as you go along.
I used the mushroom variety and chucked in smoked bacon, peas & spring onion and then some rocket leaves just at the end of cooking......very nice and doesn't taste like it comes from a packet!;)
Best of all it doesn't need anything like the attention required to make one from scratch.
