Here are a couple of variations on the same theme which are good. The Christmas puds are great for the coming season:-

Ginger Fudge Bars

3 ozs Butter or Margarine
2 tblsps. Syrup
6 ozs Sugar
sm tin Condensed Milk
1 tsp. Ground Ginger
8 ozs Crushed Digestive Bisc.
2 ozs Crystallised Ginger
4 ozs of each Plain and Milk Chocolate melted

Melt marg, syrup, sugar, cond. milk and ground ginger together and bring to the boil, simmer for 8 mins. Stir in crushed digestives and crystallised ginger. Spread onto a swiss roll tin, allow to cool just a little then spread with chocolate.
I allow it to cool right down then cut it and then put it into the fridge to harden.

This can be adapted by adding anything such as raisins soaked in rum and some larger bits of broken biscuits such as arrowroot instead of the gingers.
Or stir in some chocolate and nuts, then the topping could be white chocolate.
Or chopped cherries, fruit and nuts.

Chocolate Christmas Puddings
4 ozs Butter 2ozs Raisens
2 tbs Syrup 2 ozs Glacé Cherries
1 tbs Milk 1˝ ozs Chopped Hazelnuts
5 ozs Good Plain Choc. 2 ozs Good White Choc.
8 ozs crushed digestives Tiny bits of cherries and angelica to decorate

Put butter, syrup and milk into a large bowl over a saucepan, stir until melted. Remove from the heat and stir in melted plain choc and crushed bisc. Mix in raisens, cherries and nuts. When cool enough make into small balls then chill in the fridge. Finally decorate on top by allowing small amounts of white choc to run over the tops to resemble custard type sauce. Top off with a small bit of cherry with two tiny angelica leaves. Put into ‘petit four’ cases. Merry Christmas!!

Enjoy :D
