How do you do multiple quotes?

I can pick out one quote by clicking on the quote button on the particular post you want to quote from - but how do you then go back an pick out another quote??

Sorry I didn't explain myself very well. If I have have read a number of posts on a thread that I would like to reply in one go how do I pull all these quotes by different people onto the one reply?
