These are yummy! I've adapted a recipe to lower the fat and sugar, but hopefully keeping all the flavour. To lower it still you can substitute butter with vegetable oil (same volume) - this will change the flavour a bit but it will still work :) NB changing to oil doesn't alter the calorie count so if your cholesterol is fine don't bother lol

Grab yourself a mug, teaspoon and tablespoon - no worries about weights here :) One of the bonuses of mugs is that http://recipes.sparkpeople.com/recipe-calculator.asp (this recipe calculator)works so you can calculate how sinful they are!

Calories per serving - 195 (and these are big cookies. You could make them smaller of course)
Fat - 9.75g
Saturated - 4.5g

This should make 36 large cookies

3 cups of flour
1 tsp baking powder
1 scant cup of butter - room temp
1 1/2 cup golden brown sugar
1 tsp vanilla extract
2 large eggs
1 cup dried cranberries
1 cup white choc chips (or a block chopped finely)
1 cup of coarsely chopped macadamia nuts

Easiest in a blender but you can do it by hand...

Preheat oven to a medium - 175/gas mark 5 ish

Blend the butter until light and fluffy then add the sugar and blend until creamed nicely.
Beat in the eggs, one at a time, then the vanilla.
Add dry ingredients and beat until just blended.
Stir in cranberries, nuts and choc.

Pop a tablespoon sized blob on a baking tray lined with greaseproof paper. 1 1/2 inches apart should be far enough. Bake until they look done - about 15 minutes.

Edit - even making them that big it still made 22 cookies!
