hi all does anyone have a basic recipe for banana loaf many thanks :Razz

6oz plain or wholemeal flour
20z oats
4oz butter
4oz brown sugar
2tsp baking powder
1/2 tsp cinnamon
2 eggs
4 ripe bananas
mix altogether! add the bananas chopped at the end and just fold in ,if u over mix them they will go stodgy.bake 180c/gas mark 4 for 45-60 mins in a 2ib loaf tin.i put banana chips on the top of mine just before they go in the oven. good luck!

Banana & Coconut loaf is lovely too.

6oz self raising flour
2oz dessicated coconut
4oz brown sugar
2 medium ripe bananas
2 eggs.
4oz margarine

Cream together sugar & eggs.add your mashed bananas.
Add an egg at a time while gently folding in flour and coconut mix.
put mix into lined loaf tin.

Place in moderate oven 180 c for about an hour.
Check to make sure cake is cooked throw properly as top may brown before centre cooked.
If needed cover the top with foil and finish baking.

Enjoy.:D
