I have a massive horse radish growing in the garden, is it easy to make some sauce?:confused

It's very easy:

HORSERADISH CREAM

1/3 cup freshly grated horseradish
1 teaspoon white wine vinegar or lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup heavy cream, softly whipped

Use a microplane grater to grate the very fibrous horseradish, then mix the horseradish with the vinegar to keep the flavor from dissipating. Add the mustard, salt, and pepper, mix again; then fold into the whipped cream.

Makes 3/4 cup.

Rheghead - make sure you guard against the fumes - very acrid.

and fer goodness sake, dont get the juice in any cut or in your eyes...you'll be blinded and stinging for hours.

The horseradish sauce was great! I substituted English mustard though and used sherry vinegar instead and it turned out just fine!:) The fumes were a bit nippy but no worse than an onion.
