Just wondering if anyone has a good recipe for scotch pancakes (aka drop scones)? Have plenty recipes for the thin crepe style ones, but fancy something more traditional!
Any help appreciated!

Scotch Pancakes

1 1/2 teacups S R flour
1/2 teacup sugar
small tsp salt
1 egg
1 teacup milk

Mix quickly and lightly. Put dessertspoons of mixture onto hot greased girdle. When bubbles burst, turn pancakes over using palette knife. Cook for a few minutes more until golden brown.

Place pancakes on tea towel on rack and cover with another tea towel, until cool. This stops them going dry by cooling them in their own steam.

Serve with butter and jam.


Have been using this recipe for the last 26 years, never fails, although I usually double up the quantity of mixture. :)
