Nice set. I'm drawn more to No.1 (though the sky is over exposed).

Where is this?

Loch Loyal, the river beyond it and the loch just east of
Altnaharra....which I can't give a name to as my OS map runs out before it gets there!

Any suggestions about how to get the sky less exposed? Had the camera on a fast speed as most of the shots were taken into the light so that I could get the dark framing of the trees.

A ND grad filter should sort you out, or you could shoot HDR images (my preferred route)
