750gms topside beef
3 Tablespoons corn oil
1 Large Spanish Onion
1 Clove garlic crushed
1 Teaspoon ground ginger
1 Teaspoon ground cumin
1 Teaspoon ground coriander
1 Teaspoon chilli pepper
60 gms dessicated coconut
2 teaspoons light soft brown sugar.
I tablespoon lemon juice

Slivers of red pepper, green chilli and small onion rings to garnish.

Heat the oil in a large shallow pan and add the garlic and onions fry gently until soft.
Add the beef cut into 1cm thick slices and brown.
Add the spices and cook for 2 mins.
Add the rest of the ingredients and simmer uncovered for 30 to 35 mins stirring occasionally to prevent sticking.
Serve hot with the garnish and a side dish of rice of your choice.

Tried this tonight, it was delicious not too hot or too spicey .
