hi all i have just gone and invited some friends round for dinner at easter[i know i should of kept it shut] and i am now unsure what to do for the main course the rest i have in hand the starter the dessert easy but the main one HELP

I was tempted to say rabbit LOL but what about chicken breasts filled with philadelphia then wrapped in bacon with some seasonal vegetables and a sauce?

Lots oif great recipes on the internet but if you are a great chef like me just make it up as you go along.

Might help if we knew what the other courses were. the starter is just homemade chicken and leek soup with home made bread the dessert is a recipe i got from scary biscuits on line a couple of weeks ago it doesnt have to be anything over the top but im stuck for ideas

If having people to dinner I always like to serve something that I've pre-made so I can just pop it in the oven or heat up and its ready. Nothing worse than everyone sitting drinking all the wine whilst you slave over the cooker!
What about a lasagne, could be made the day before and then popped into the oven to cook when needed?

Roast Spring Lamb is traditional at Easter and delicious served with roast tatties, a few boiled tatties, maybe some broccoli and even something a simple as frozen peas, the tender Petite Pois are best .

why dont you phone them up and tell them to join the org and reads yer post then they willna show up, or just phone them and tell the answering machine that the dinner is off due to the lack of brussel sprouts,

You can't beat a nice Roast & veggies, easy aswell & everyone enjoys :D

Get some onions (normal and shallot) and some mushrooms and dice them finely. Add garlic and butter and parsely and mix it all together (cook it like).

Then stuff that into chicken breasts and put "lazy garlic" on the outside of the breasts. Then wrap in parma ham and drizzle with lemon juice.

Then do chips or veg or whatever and serve it up!

Honestly it is ace!

I will find the recipe I used in a whiley!

Although.... if having people over to socialise maybe garlic is a bad one?

I would say if its a 3 course meal you dont want a massive meal, something light and easy.

Gammon is a good dish, my mum taught me how to make good gammon. Marinade your gammon in diet coke (yes thats right) and chop some spring onions up and put that in too. Marinade in that for about 2 hours, when you remove it then put some French mustard on either side of the gammon, just a thin layer. Then cook accordingly. Its gorgeous! Usually i would serve with some mashed tatties, cauliflower and cheese sauce, also some other vegetables that you enjoy.

It is Easter why not lamb? A good rack of lamb would be lovely just get the butcher to French trip the bones.

If they are there especially for the cooking and not your company its not worth it!

ps have an easy recipe for monkfish

bung monkfish tails in a ovenproof dish with the grated rind and juice from 1 lemon and a glass of white wine with some chopped parsley and white pepper cover with tinfoil and but in oven at 180ish for about 30 mins(should look opaque) and serve with tatties and veg.. I like mash and green beans with it!
this is ok if you can get the fish on special in tescos if not dont bother as it will be expensive!

I've done similar with pork but I used 'fat' Coke, none of that diet crap, and it was delicious, even if I do say so myself. Try it, you know you want to. :)

Glad you liked the idea, alot people i have said it to are unsure, but once tried they really enjoyed it.

Might try that next time i buy gammon then. Dont buy it often as im the only one in my house who likes it.
